Apple-Ginger
Sweet, Tart and Tangy Oyster Topping

Ingredients:
1/4 Cup + 1 tablespoon cider vinegar
2 tablespoons of minced shallots
1/2 tablespoon finely grated peeled fresh ginger
1 Cup finely chopped sweet apple (Honeycrisp [preferred], Fuji, Golden Delicious)
1 Cup Hot Water
3 Heaping Spoons of Sugar
Directions:
Mix all ingredients
In 1 cup hot water, dissolve three large spoons of sugar and pour over ingredients.
Let stand/cool in refrigerator
