Exploding Oysters!

Yes - oysters and the combinations of tastes we couple with them leads to a taste explosion. But that is not what this post is about. It is about safety.


Oysters are a delicacy enjoyed by many, but when it comes to cooking them, there's a peculiar phenomenon that can occur: they can explode!


As well-trained campers know, the same phenomenon applies to campfire-rings built of water-infiltrated river rocks. Water trapped inside these rocks will boil, expand and explode, sending rock fragments into the air and at incredible speeds. Anyone sitting next to such a fire can be easily injured. No bueno.


The same explosive reaction occurs when oysters are subjected to high heat, causing the liquid inside to rapidly expand. This sudden increase in pressure can lead to the shell bursting, creating a mess and potentially dangerous situation. Explosions can send bits of oyster shell and hot toppings into the air. Hot liquid and small fragments can easily cause injury to sensitive hands and eyes, especially when cooks are hovering over observing and handling their dish. Most cooks do not think to wear eye protection or welding apparel to protect themselves. Most only adorn aprons!


Understanding the science behind this occurrence can help cooks avoid such mishaps and ensure a safe and enjoyable culinary experience.


Why Do Oysters Explode?


Oysters contain a significant amount of liquid in their shells. When heated, this liquid turns to steam, and if the pressure builds up too much, it can force the shell to crack or explode. It is also possible that other organisms on the shell could explode.


How to Prevent Oysters from Exploding

  • Start with shucking: Always shuck oysters before cooking them to avoid pressure buildup. Also, if the oysters have a lot of hitchhikers on them (other organisms) such as barnicles, young wild oysters that go unnoticed, etc..

  • Control the heat: Use moderate heat to cook oysters, allowing them to heat gradually.

  • Use a lid: If you're steaming oysters, use a lid to manage the steam without letting pressure build too high.
